Homemade Sugar-Free Ice Cream

First time I have ever made Homemade Ice Cream! This one is perfect for anyone who is low carb or wants to be sugar free. This was actually very good!! Here’s the recipe:

Ingredients:
2 cups heavy whipping cream
1 scoop vanilla flavored protein powder
1 Tbsp MCT Oil powder
1 Tbsp of Swerve sweetener
1 Tbsp of Organic maple syrup
Chopped Walnuts, optional

Pour all ingredients into a wide mouth mason jar. Put lid on and shake for about 15 minutes. I poured the ingredients into six 4-ounce containers and then put them into the freezer. Freeze for at least 2 hours.

For a 4 ounce serving, 2 grams of carbs, 33 grams of fat, and .3 grams of protein.

May Your Spirit bring back justice for all mankind

Broccoli Cashew Apple Pear Salad

This salad is super easy, and amazingly delicious! I made it for dinner tonight, along with Air Fried Chicken Thighs. Perfect combination. Just look how colorful this is!

Broccoli Cashew Apple Pear Salad

Ingredients for Salad Mix:

  • 5 cups broccoli, florets, chopped into small bites
  • 1 apple, cored and diced
  • 1 pear, cored and diced
  • 1 cup cashews, toasted or roasted
  • 1 cup dried cranberries (I used a mix of cranberries & raisins)

Ingredients for Salad Dressing:

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 Tbsp lemon juice
  • 1/4 cup honey, softened or warmed up
  • 1/4 tsp salt

Instructions:

In a large cowl, combine together chopped broccoli, diced apple, diced pear, red onion, cashews, and dried cranberries.

In a small bowl, stir together mayonnaise, sour cream, lemon juice, honey, and salt. Note that honey should be soft and runny, warm it up, if needed. Whisk together all ingredients until well combined and smooth. Add salt, if needed. Add dressing to the broccoli salad and stir everything together.
